Thomas Sorcinelli’s journey in hospitality began in Italy, where he studied International Hospitality Management and Food and Beverage at the renowned School of Hospitality Management A. Panzini AEHT. Even during his early school years, he spent every seasonal break working in premium hotels along the Adriatic Riviera. These formative experiences, immersed in service excellence and surrounded by passionate professionals, helped him develop both technical skills and a deep appreciation for the craft of hospitality.

After completing his studies, he committed fully to the profession. His first turning point came when he joined a Michelin-starred restaurant, quickly progressing to Restaurant Manager and Sommelier within a year. It was here that he developed a deep passion for wine, which went on to shape much of his early career. He later graduated as a Professional Sommelier with two of the world’s most respected wine associations, further strengthening his foundation in beverage leadership.

Eager to challenge himself internationally, he moved to London to immerse himself in one of the world’s most dynamic dining scenes. He joined the rising celebrity restaurant Assaggi in Notting Hill, where the team earned its first Michelin star within just two years. His time in London proved transformative, refining his skills and broadening his exposure to luxury retail and brand-driven hospitality during his tenure at Harvey Nichols.

A defining phase of his career came with his appointment as Wine & Beverage Manager at The Ritz London. Over the course of five years, he contributed to establishing one of the country’s leading wine programmes and helped break multiple financial records in the hotel’s 106-year history. Following two successful years, he was headhunted by Fundamental Hospitality in Dubai, where he served as Global Director of Administration. Today, alongside his corporate leadership work, he is pursuing an MBA in Entrepreneurship and Innovation at York Business School, York St John University. This experience reinforced a key belief: that genuine passion for one’s craft creates limitless opportunities. His time there elevated both his technical and managerial capabilities while strengthening his appreciation for dedication and excellence.

During his mid-career, he takes particular pride in the achievements at the Savoy Grill, where the team delivered the strongest financial performance in the venue’s 125-year history. This accomplishment highlighted the impact of strategic clarity, operational excellence, and strong leadership working in harmony.
